Let’s Make a Hungry Hippo Tuna Sandwich!

Ingredients

  • ⅓ cup greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon dill or parsley chopped
  • 2 5-ounce white albacore tuna in water drained
  • 2 celery stalks minced
  • 2 tablespoons red onion minced
  • 2 whole grain tortillas

Instructions

In a mixing bowl, whisk together the Greek yogurt, lemon juice, mustard, salt, pepper and dill or parsley until well combined.

Add the drained tuna on top, along with the celery and red onions. Gently stir until well combined.

Serve on tortilla – cutting away just a small section from each side of the tortilla makes a perfectly shaped hippo head. Cute the shape first before adding the filling

For the final touch you can use the excess tortilla that was cut away for the ears. Make small slits and add them to the top

Now you just have to add the face. Use a tiny dab of Greek yogurt to hold the eyes and nose in place. Cut a grape in half for the eyes, and use two blueberries for the nostrils
