During July, August, and September receive a book and a placemat at your WIC appointment! These are fun and engaging tools for your family to learn and grow together!


Let’s Make Owl Chili!

Ingredients

  • 1 cups uncooked brown rice, rinsed
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 1/2 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 (28-ounce) can crushed Red Gold Tomatoes
  • 2 (19-ounce) cans black beans, rinsed and drained
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 slice of cheddar cheese
  • Plain Greek yogurt
  • Slice of wheat bread

Instructions

Cook the brown rice according to the package directions…

  1. Heat the vegetable oil in a large pot over medium heat. Chop your veggies into small pieces to hide them from your picky eaters…
  1. Add your chopped onion, bell peppers, garlic, and zucchini to the pan. Cook until softens and turns translucent, about five minutes. Add the chili powder and cumin, cook and stir one minute. Stir in the Red Gold tomatoes and black beans (reserving 2 for the eyes). Season with salt and pepper to taste. Bring to a simmer over high heat, then reduce heat to medium=low, cover and let simmer for 20 minutes. Stir in the reserved rice after the 20 minutes.
  1. Spoon the chili into a bowl. Add Greek yogurt for the eyes and place your reserved black beans on top for the pupils….
  1. Toast one piece of bread and cut into triangles for the wings. And one to each side of the bowl
  1. Cut out a beak and feet from your cheddar cheese.

This Owl Chili Recipe is such a fun & healthy Fall dinner that the Kids will absolutely LOVE!


WIC Program Overview

WIC is a supplemental nutrition program for low-to mid-income families. WIC provides supplemental nutritious food, nutrition education, breastfeeding support, and referrals for pregnant, breastfeeding, and postpartum women, infants, and children under age 5.
